2. Japchae
This dish is no doubt my guests' (any citizenship) all time favorite.
Stir-fried sweet potato glass noodles with veggies and meat (optional).
Yes, noodles made of sweet potato starch!
It is not comparable to other kind of wheat or rice noodles.
It is so chewy, it absorbs the sauce very well and it keeps it's shape!
I love this noodle!
I always have some at home and use it for many dishes.
I use most of the time, red and yellow peppers, carrots, onions, spinach, mushroom (shiitake, wood-ear) and beef. This time, I used chicken breast and it is also delicious!
You just have to cut the veggies in julienne then stir-fry them separately with salt and oil.
Cut the meat also in julienne, marinate with soy sauce, pepper, garlic, sugar. Then Stir-fry.
Cook the noodles, stir-fry with sesame oil and season with soy sauce, garlic and sugar.
Mix everything all together.
Mission accomplished!
Whenever I am hosting, I make way more than needed because my guests are always asking me to take home some leftovers.
