Have you heard of Lacto-Fermentation?
Well,  It is a way to preserve food for a longer period through a method of fermentation. 
Lacto is an abbreviation for Lactobacillius which is actually a kind of bacteria. 
A very good bacteria, like probiotics.
That Lacto is created during the fermentation. 
The most popular and famous foods you know are Korean Kimchi, German Sauerkraut...
