Les crêpes. The best crepes ever!

J'ADORE LES CREPES! 
And I think everyone loves them. 
I'm making at home, at school... and it's always the success!
At the end of every year, to celebrate the students' hard work, 
I make some crêpes with my students in all my classes.

Many of them prefer the sweet crêpe mostly with Nutella and fruits (bananas, strawberries usually)and whipped cream! But some of them, including me really like the savory crepe with lots of cheese!!

There are many different recipes for crêpe but so far, I think this works great and it's really easy.

Savory Ham and Cheese Crêpe

Sweet Chocolate-Banana Crêpe



INGREDIENTS:

  • 2 cups of flour
  • 2 cups of milk
  • 2 Tbs of melted butter
  • 2 Tbs of sugar
  • 3 eggs
  • optional: lemon or any citrus
  • my secret ingredient: 2 Tbs of beer! or sparkling water

How to make it?

In a mixing bowl, beat the 3 eggs. 
Add 2 tablespoon of sugar and mix. 
Then add 2 cups of sifted flour and stir slowly pouring the milk at the same time. 
Add the melted butter and mix. 
Finally, put in juice of a half lemon and beer.
The batter is ready!

You can use it right away but I would suggest you leave the batter in the refrigerator for at least 1 hour (for better texture).



Heat a large pan with a little bit of oil. On a medium heat, put a ladle of the batter and spread it evenly. You can make circle with the pan or use a spatula to spread the batter on the pan. Cook for 1 minute. 
Then flip it! Make the crepe jump! Cook the other side for 30 seconds to 1 minute.
Voilà, it's ready! 

   


Garnish and decorate the crêpes with whatever ingredients you like.

I also really like the simple one with only some sprinkled sugar and some lemon zest.
