What to do with leftover rice? - Rice salad --- 찬밥으로 뭐하지?
Have you ever felt guilty about all the leftovers and felt bad to throw them away?
My fridge is full of leftovers (grains, veggies, meats...) and actually, I can tell you that I like it!!
You have so many options to recreate new dishes with the leftovers!!
Whenever I cook rice, I usually make way more than I need.
I’m sure it also happens to you.
But no worries, we can do so much with rice!
So... What can I do with leftover rice?
The sunny and beautiful weather today made me think about preparing a rice salad. Perfect because I also have many small pieces of veggies!
The first time, I made a rice salad for my husband, his reaction was: What???? Making salad with rice??? 뭐?? 밥 샐러드???
Eating cold rice, it's not very Korean...
Well, he LOVED IT!!
And now, he is asking me to make it more often.
Let's make it!
Ingredients:
- leftover rice (any kind works)
- cucumber
- tomatoes
- red onions
- chick peas
- tuna
- olives
- peppers (red, orange, yellow, green)
- salt
- pepper
- olive oil
- parsley
Of course, if you don't have all these veggies in your fridge, that's OK! You can also skip or replace the canned tuna with salmon or ham.
In a big mixing bowl, put the rice and add all the diced veggies. Add tuna, olive and chick peas.
Add salt, pepper, parsley and a good amount of olive oil.
Mix it together.
VOILA!
