Pasta is LOVE!!
I could eat pasta everyday, I would never be bored.
How about you? How do you like your pasta?
What is your favorite sauce?
Since I was a kid, I didn’t really have a favorite one. I pretty much enjoyed all kind, with tomato sauce, meat sauce, carbonara, cream sauce, or simply, pasta only with EVOO or butter.... Well, I was a real good pasta eater!
When I invite friends at home, there are always kids coming with the parents. Young children or teens, I really want them to enjoy the meal as much as we adults do!
So I usually like to prepare pasta for them. It never goes wrong. Especially most of the kids’ favorite, meat sauce pasta. So yummy!
Meat sauce... OK... we love it but... Bolognese? Ragu?
When you go to an "Italian" restaurant and order a Bolognese pasta, you usually get a tomato sauce with some meat in it. Well, I feel really sorry for those who thought the bolognese pasta was that kind of tomato-meat sauce.
Bolognese sauce is much more hearty with a lot more than just tomato sauce and some ground meat in it.
I’ll show you. Let make some!

This sauce is so versatile:
make a large amount of it
so that you can use it quickly for whatever dish you want!
Ingredients:
1 1/2 lb (750g) of ground beef
1/2 lb (250g) of ground pork (or more beef)
150g pancetta (or bacon)
2 medium carrots (minced)
2 medium onions (minced)
2 ribs of celery (minced)
2 garlic (minced)
5 + tomatoes (crushed) - can buy canned tomatoes
2 T tomato paste
Olive oil
Butter
White wine
Herbes de provences / Italian herbs
Bay leaf
Salt & pepper
3 Cups Beef bouillon (or chicken /vegetable)
..........
Let’s cook!
In a large heated pot, melt butter with some olive oil.
When butter is melted, add pancetta then the ground meat. Cook it throughly.
Keep it in a separate bowl.
To the pan, stir fry the onion, carrot, celery, garlic
until well browned.
Pour in 2 cups of white wine to deglaze the pan.
Add the meat, 2 bay leaves, herbs, 3 pinch of salt and pepper.

When it is well mixed,
add the crushed tomatoes and the tomato paste.
Stir until everything looks getting together.
Add finally the bouillon.
If you are in a hurry, you can use the canned tomato sauce!
(Try not to use the flavored ones...)
Cover the pot and leave it on medium-low heat
for at least 30 minutes.
Long simmering = better deep taste

It is not complicated at all!
Make a large amount of it when you can and you can keep it in the fridge and in the freezer for your next meals.
