Korean Stir-fried noodles

Japchae 잡채


Korean Stir-fried noodles Japchae 잡채 @Mon amie Shon

Ready in 30-45 minutes

Serves 4 - 6  people

Ingredients

A handful or (g) of each of the following:
Sweet potato starch noodles (250g)
Any lean meat, seafood or tofu (100g)
Spinach or sliced green pepper (150g)
Sliced onion (100g)
Sliced carrots (100g) or
Sliced red, yellow peppers (100g)
Shiitake (5g) - optional
Wood ear mushrooms (5g) - optional
       

Sauce

Soy sauce - 4 Tbsp
Granulated sugar - 2 Tbsp
Brown sugar - 2Tbs
Sesame oil - 4 Tbsp
Oil (any vegetable oil) - 4 Tbsp
Minced/ Crushed garlic -1 Tbsp
Salt/ Pepper
Sesame seeds

Utensils

Two large pans
Chopsticks / tongs
Preparation

  1. Soak the noodles in water. Take a handful of dried sweet potato noodles and soak it in warm-hot water for 30 minutes or until the noodles are softened.

  2. Cut the vegetables and meat in thin slices.

  3. Stir-Fry the vegetables. Heat a large pan with 2 Tbsp of vegetable oil. Sauté the vegetables to make them sweat. Season with salt and pepper. Turn off the heat and leave them aside.

  4. Stir-Fry the meat. Heat another pan with the remaining oil. Stir fry the meat. Season with salt and pepper. When cooked, add it to the vegetables.

  5. Cook the sauce. In the same pan used previously, add all the ingredients for the sauce. On medium heat, stir  until the sugar is dissolved and the sauce looks glossy. 

  6. Stir-Fry the noodles. Add the previously soaked noodles in the sauce and stir-fry until the noodles are transparent and are coated with the sauce.

  7. Combine all the vegetables, meat and the noodles. Mix well. Sprinkle with more sesame seeds for decoration. ENJOY!

Tips

Traditionally, we stir-fry each of the vegetables separately and then combine everything at the end to keep the texture and flavor of each one. This method also gives a sophisticated presentation of your Japchae.

We also add eggs for more flavor! The eggs should be fried slowly at low heat, white and yolk separately then cut also in julienne like other ingredients. You will then have thin yellow and white slices of egg to add in your Japchae.
