This bread was apparently invented in Italy in response to a large demand of French baguettes.

And this bread is called “slipper” referring to its shape, flat and elongated.

One of the characteristics of this bread is that it is made from a super hydrated dough

which will give the chewiness and softness.

It can be enjoyed on its own, or with olive oil, salt and pepper, or with balsamic vinegar.

It is also very good grilled or as a panini sandwich.

I bake ciabatta regularly, really very often for my family and friends.

It's so easy, convenient, and even fun to do, you'll never stop doing it at home!

For the ingredients, you will need:


2 cups of water,

2 tablespoons of honey,

2 tsp of salt

2 tsp of yeast,

2 tbsp of olive oil,

2 cups of all-purpose wheat flour

and 1 cup of wheat flour for bread.


You will also need a large size container.




First, in the container, add the water at room temperature, pretty lukewarm and the yeast.
Dissolve the yeast. Add honey and stir well to dissolve it as well.


Now pour in the flour all at once and mix well. The dough will be very hydrated and sticky.

Close the lid and let sit for 30 minutes.

½ hour passed, add now salt and olive oil to the dough.
And we're going to start working the dough and it's really fun.

Take one side of the dough, lift, stretch then fold over on top.
Turn the container, take a second side, lift, stretch and fold.
Continue for the other two remaining sides.

When all 4 sides have been stretched and folded,
you will put the lid back on and let sit for another 30 minutes.

This stretching, folding and resting, you will repeat it 3 more times.

You will see that the dough becomes more and more firm and elastic.
And it will also grow in volume.

After the last folding, let it stand 30 minutes - 1 hour until the dough size doubles.

Now is the time to take it out of the container and shape it.
Flour generously your work plan.
It's very easy to get the dough out of the container.
Scrap the edge of each side, then you just have to turn the box over so that the dough falls on the counter itself. Because we added olive oil, you will have no issue with a sticking dough.

Try to form a rectangle by gently pulling the angles outward and bringing the sides inward.
Divide the dough according to the number of loaves you would like to have.
I generally divide it into 2 and then into 4-5 to have 8-10 ciabattas.

It's time to let the dough rest. Prepare a fairly thick cloth.
You are going to put the pieces on this cloth, separating them by folding the cloth in between.
Cover with another towel or plastic and let sit for 1 hour until the size has doubled.

Meanwhile, preheat the oven to 400F or 200C.

We will move the shaped dough delicately on the baking sheet.
Bake for 15 minutes.
If you want a crispier crust with a more pronounced color, turn off the heat
and leave in the oven for 5 more minutes.

You can eat it hot right away or keep it for a few days in a paper bag. It’s just as delicious!
